4 cups shredded cabbage
2 medium apples, cored and thinly sliced
1/2 cup chopped walnuts
1/4 cup chopped parsley
For the dressing:
1/2 cup greek yogurt
2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and pepper, to taste
In a large mixing bowl, combine the shredded cabbage, sliced apples and chopped walnuts.
In a separate small bowl, mix the Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt and pepper until well combined.
Pour the dressing over the cabbage mixture and toss until evenly coated.
Cover for at least 30 minutes.
Garnish with fresh chopped parsley.
