Grilled Shrimp and Avocado Salsa

Ingredients

1 pound fresh shrimp, peeled and deveined 

1 teaspoon Tajin seasoning

1/4 teaspoon kosher salt

4 tablespoons olive oil, divided in half

3 cloves garlic, thin sliced

1/4 red onion, thinly sliced 

1 jalapeño, thinly sliced

2 limes, juiced

3 tablespoons fresh cilantro, chopped

2 avocados, 1/4 inch diced

Tortilla chips, as needed

Preparation

Preheat a grill to medium-high heat. 

Toss the shrimp with 2 tablespoons olive oil, Tajin and salt. 

Place on grill and cook 1 minute per side.

Heat a small sauté pan with the rest of the oil on medium-high heat. 

Add the garlic and jalapeño. 

When garlic turns a pale yellow golden color, remove from heat and add salt, lime juice, red onion and cilantro. 

Toss the grilled shrimp into the pan and serve with diced avocado and tortilla chips
