1 pound pasta of choice
2 cups ricotta
1 lemon, zested and juiced
Salt for pasta water
Fresh ground black pepper
1/3 cup fresh grated parmesan cheese
Basil for garnish
Lemon slices for garnish (optional)
Bring a large pot of water to a boil over high heat. Season with salt and add the pasta.
Cook the pasta to al dente.
While the pasta cooks, combine ricotta and about a 1/4 cup pasta water in a large bowl, and mix until it’s the consistency of yogurt.
Stir in lemon juice, zest, ground black pepper and freshly grated parmesan.
Add cooked pasta and mix until fully combined.
Garnish with fresh basil, black pepper and lemon slices.
