Lobster Roll BLT

Ingredients

1 1/2 pounds cooked lobster meat

1/4 cup mayonnaise

Juice of one lemon

1 tablespoon chives

Salt and pepper to taste

1/2 pound cooked bacon

4 leaves romaine lettuce

1 tomato, sliced 1/4-inch thick

4 potato rolls

2 tablespoons butter, softened

Preparation

Place lobster meat, mayonnaise, lemon juice, chives and salt and pepper in a bowl. 

Stir gently to combine.

Spread butter on the inside of each potato roll and cook on a griddle or pan for 2 to 3 minutes or until golden brown.

Divide the lobster mixture among the buns, top with bacon, lettuce and tomato. 

Garnish with additional chives.
