1/2 cup white chocolate chips
1/2 cup whole milk
1 cup heavy whipping cream
3 tablespoons powdered sugar
1/2 teaspoon vanilla extract
3/4 cup chopped strawberries
2 tablespoons sugar
1 teaspoon lemon juice
Place chocolate in a medium bowl.
Heat milk until steaming and pour over chocolate.
Let sit for 1 to 2 minutes, then stir until completely smooth.
Allow to cool completely.
In another medium bowl, whip heavy cream, powdered sugar and vanilla extract until soft peaks form.
Gently fold into cooled chocolate mixture.
Pour into 4 small ramekins or other small tumblers and chill overnight.
In a small bowl, mix together strawberries, sugar and lemon juice.
Let the mixture macerate in the refrigerator overnight.
To serve, spoon a small amount of the strawberry mixture over the mousse and garnish with a fresh strawberry, mint or shaved white chocolate curls.
Try changing up the fruit with raspberries, blueberries or even peaches. – Chef Rose
