Marinated Mushrooms, Tomatoes and Mozzarella

Servings: 4 to 6


1/4 cup balsamic vinegar 

1/3 cup olive oil 

1 1/2 teaspoons white sugar 

1/2 teaspoon salt 

1/2 teaspoon ground black pepper 

2 cloves garlic, minced

12 ounces cherry tomatoes, halved 

1 (8-ounce) package fresh mushrooms, halved

8 ounces fresh mozzarella, cherry size

1/2 cup chopped fresh basil


In a medium bowl, whisk together vinegar, oil, sugar, salt, pepper and garlic.

Gently toss mushrooms, tomatoes, mozzarella and basil into vinegar mixture. 

Cover and chill for 3 hours or overnight.

Garnish with fresh basil
