Homemade Chocolate Mousse

1/2 cup semi-sweet chocolate chips

1/8 teaspoon kosher salt

1/2 cup whole milk

1 cup heavy whipping cream

3 tablespoons powdered sugar 

1/2 teaspoon vanilla extract


Mix chocolate and salt together in a medium bowl. 

Heat milk until steaming and pour over chocolate mixture. Let sit for 1 to 2 minutes then stir until completely smooth. Allow to cool completely. 

In another medium bowl, whip heavy cream, powdered sugar and vanilla extract until soft peaks form. 

Gently fold into cooled chocolate mixture. 

Pour into 4 small ramekins or other small tumblers and chill for at least 3 hours or overnight. 

Top with whipped cream and chocolate shavings.
