Chicken Enchilada and Black Bean Pizza

Servings: 6 to 8


1 12-inch pizza crust (fresh, canned or precooked will all work) 

1 cup enchilada sauce 

1/2 cup cooked and shredded chicken 

1 cup cooked or canned black beans, rinsed and drained 

1/2 cup Mexican blend shredded cheese 

1 large avocado, diced 

1/2 cup fresh cilantro 


Preheat oven to 350° Fahrenheit. 

Place pizza crust on large baking sheet and spread enchilada sauce over crust. 

Sprinkle chicken, beans and cheese over sauce. 

Bake until the crust is brown around the edges and cheese is bubbling. 

Remove pizza from the oven and top with avocado and cilantro.
