Citrus Salad

3 cups arugula

1 blood orange

1 pink grapefruit

1 navel orange

1 pomegranate, seeds removed


1/2 small red onion or 1 shallot, chopped

1/4 cup chopped walnuts

3 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

1/2 teaspoon honey

Lime juice to taste


Peel citrus, remove as much pith as possible (the white, spongey substance you see when peeling the fruit) 

Slice into wheels. 

Remove any pits.

In a serving bowl, place the arugula, layer the fruit, sprinkle with salt, and garnish with chopped onion, pomegranate seeds and walnuts.

Whisk together olive oil, vinegar, honey and lime juice until well combined. 

Taste, adjust seasoning as needed, and drizzle over salad.
